Good Flavor For Latte Syrup, Feb 15, 2009

I used this extract to make a syrup for Latte. 4 Teaspoons of extract to 2 cups sugar and 1 cup water. Add 1 oz to 1-1/2 oz of this syrup (more or less to taste) for a 12 oz Latte. Good flavor. This is really superior syrup to even the fancy Italian brands. All of those are made with cheaprer corn syrup sweetener which is really inferior to cane sugar for most applications.

The flavor is clear, bright and pure. I use it in making gourmet chocolate honeys for a very discriminating clientelle (read: picky!) and this is the only red raspberry that can pass the test. Top note is clean and sweet, never cloying. The only downside for me is in using a very dark chocolate, I require a base note deeper than this one can provide alone. That said, blended with a black raspberry , the red makes a balanced chocolate of unsurpassed quality my lady customers have named Razzgasm!
