Cook’s Vanilla represents our drive to produce the finest vanilla extracts. Only ten percent of the world’s vanilla beans are picked when perfectly mature. We harvest the fully vine-ripened beans and cure them ourselves to assure a delicate, intense, beautiful vanilla. Through our cold extraction, we have captured this exotic essence in a bottle.

Cook’s Pure Vanilla Bean Puree (Paste) is made with the finest vanilla beans from Madagascar. Vanilla beans from Madagascar are of the Vanilla Planifolia variety. Often referred to as Bourbon vanilla beans, vanilla beans from this region are named after the French Bourbon Islands, one of which was Madagascar. This variety of vanilla is universally pleasing and enhances other flavors.

Substitute 1 teaspoon of Pure Vanilla Bean Puree to 1 teaspoon of vanilla extract. In standard single batches, use 1 teaspoon to 1 tablespoon. As a condiment, use dropper to add 1-5 drops to taste. Finally, for wholesale applications, use 2 to 4 ounces per 5 gallons (40 pounds) of mix. Shelf life is 1095 days from manufacture. Manufacture date is listed as UDC. Although, much like a fine red wine, pure vanilla extract actually improves with age. Store in a cool, dry, dark container away from sunlight.
